The Strawberry Clover Club adds a fruity twist to a timeless classic. Featuring Ginologist Strawberry Summer Cup, raspberry syrup, and fresh lemon juice, this cocktail delivers a beautifully balanced blend of sweet and tart flavors. The optional egg white creates a smooth, velvety texture, while the garnish of pink sugar, edible glitter, and cotton candy makes it a showstopper.

Ingredients:

  • 100ml Ginologist Strawberry Summer Cup
  • 30ml raspberry syrup (or raspberry jam)
  • 30ml fresh lemon juice
  • 2 egg whites (optional)
  • Ice

For the Garnish:

  • Honey
  • Pink sugar
  • Edible glitter
  • Pink cotton candy
  • Fresh strawberries, sliced

Method:

  • Prepare the Glasses: Lightly coat the rims of two cocktail glasses with honey. Dip into a mix of pink sugar and edible glitter. Set aside.
  • In a cocktail shaker, combine Ginologist Strawberry Summer Cup, raspberry syrup (or jam), fresh lemon juice, and egg whites (if using). Shake vigorously for 10–15 seconds to emulsify.
  • Add a handful of ice cubes to the shaker and shake again for 20–30 seconds until well chilled and frothy.
  • Strain the mixture evenly into the prepared glasses.
  • Skewer a tuft of pink cotton candy onto a cocktail stick and place it on top of each glass. Garnish with a fresh strawberry slice and serve immediately.

Homemade Raspberry Syrup Recipe

Ingredients:

  • 1 cup fresh or frozen raspberries
  • 1 cup sugar
  • ½ cup water
  • ½ tsp lemon juice (optional, to enhance flavour)

 

Method:

  • Combine raspberries, sugar, and water in a saucepan over medium heat.
  • Stir occasionally and bring to a simmer. Cook for 5–7 minutes, until raspberries break down and sugar dissolves.
  • Remove from heat and strain through a fine mesh sieve, pressing gently to extract liquid.
  • Stir in lemon juice (if using) and let cool. Store in an airtight container in the fridge for up to two weeks.
